Granola Berry Breakfast


Ingredients

  • Serves 4
  • 3 tbsp pistachios
  • 3 tbsp pumpkin seeds
  • 3 tbsp pecans
  • 3 tbsp chia seeds
  • 3 tbsp flaxseeds
  • 2-3 tbsp honey / agave syrup
  • 4 tbsp flaked coconut
  • 1/4 cups dates, chopped
  • 2 1/3 cups frozen berries
  • 4 cups plain yogurt
  • 1 packet (o.32 oz) of vanilla sugar

Preparation Instructions

1.Roughly chop pistachios, pumpkin seeds and pecans. Then toast the chia and flaxseeds along with the nuts in a dry pan (no oils or fats) and add the honey. Allow everything to caramelize for about 1 minute. Remove the pan from the stove and spread the seed and nut mixture over a baking sheet covered by baking parchment. Once it cools, break the granola into small pieces.

2.Mix the dates and coconut flakes with the granola. Puree the frozen berries, yogurt and vanilla sugar in a blender. Serve together in a bowl.

3.Feel free to add any other nuts to the granola that you happen to have on hand.
