• Serves 6
  • 3 cups fresh cranberries, rinsed (12 ounce bag)
  • 1 inch chunk fresh ginger, peeled and cut into 1/2 inch chunks
  • 1/2 cup fresh squeezed tangerine or orange juice
  • 3/4 cups sugar

Preparation Instructions

1.Add all ingredients into a pressure cooker.

2.Close and lock the lid in place. Heat on high until pressure builds and the indicator rod rises to maximum pressure.

3.Turn down the heat. Cook for 6 minutes.

4.Turn off the heat, remove cooker from heat source, and allow it to cool for 5 minutes.

5.After 5 minutes, release the pressure by slowly pressing the button on the handle. Once all pressure is released, open the lid.

6.Remove ginger; stir to break up the cranberries. Add more sugar if desired.

7.Serve at room temperature or make ahead and serve chilled.
