Hans Röckenwagner completed his rigorous apprenticeship and 3 years of schooling in the Black Forest.
He perfected his techniques while cooking
in Germany, France, and Switzerland, before being recruited by Jovan Trboyevic of the legendary Le Perroquet Restaurant in Chicago at the age of 22.
Chef Röckenwagner moved to Los Angeles in 1984 to open his own restaurant, Röckenwagner, which gained notoriety and awards for being one of
the top Southern California restaurants. In 1997, his long-awaited Röckenwagner cookbook was released, and in 1999, he opened RÖCK Bistro and
Bar. 3 Square Cafe + Bakery and Röckenwagner Bakery are his latest ventures. Chef Röckenwagner currently operates his own fine dining restaurant,
runs a full-scale retail and wholesale bakery, and consults for major hospitality-related businesses. Known for his individuality, HansĄŻ reputation was
built around his springtime white asparagus menus, innovative dishes like crab soufflé with lobster-butter sauce, his popular pretzel burger, and his
craftsmanship in designing and building his restaurants.
Of his many accomplishments, Hans is most proud of his wife Patti and children, Gina, Roxy, and Hansi, his top-spin forehand, and the many
projects he has completed as a hobby woodworker. |
